2 shots of espresso coffee
2 ( packages sugar-free instant vanilla pudding mix
2 2/3 cups nonfat milk
1 package fat free cream cheese, softened
1 package ladyfingers
1 container fat free Cool Whip thawed
1/2 cup grated semi sweet chocolate
Prepare an 13x15 inch square baking dish
Combine coffee and espresso in a shallow pan set aside
In a large bowl, beat the pudding mix with the skim milk until thickened; stir 2 tblsp of coffee mixture. Add in the softened cream cheese, beat until smooth. Dip each ladyfinger into coffee mixture for only 5 seconds.( dip only one side) Letting the ladyfingers soak too long will cause them to fall apart. Place the soaked ladyfinger on the bottom of baking dish, breaking them in half if necessary in order to fit the bottom.Spoon 1/2 of the pudding mixture evenly over the ladyfingers sprinkle 2tblsp grated semi sweet chocolate Arrange another layer of soaked ladyfingers and top with remaining pudding mixture and
2 more tblsp of grated semi sweet chocolate.
Place the remaining ladyfingers on top of the pudding, and top with whipped topping.Sprinkle top with grated chocolate, cover and chill for a minimum 4 hours or a day
for a better taste.
Personal notes:
The original version contained 375 calories.
This version is only 175 and a lot less fat without loss the taste and richness.
It's a delightfull taste with no guilt.
